Zucchini Relish
Ingredients
- 2 cups chopped zucchini
- 1 cup chopped onion
- 1/2 cup chopped sweet yellow pepper
- 1/2 cup chopped sweet red pepper
- 2 Tbs salt
- 1 3/4 cups sugar
- 3 tsp celery seeds
- 1 tsp mustard seeds
- 1 cup cider vinegar
- 1 tsp turmeric
Directions
- Combine zucchini, onion, and peppers.
- Sprinkle with salt and let stand for 2 hours.
- Rinse and drain thoroughly.
- Combine remaining ingredients in a large dutch oven pan and bring to boil.
- Add vegetables and simmer for 10 minutes.
- Pack relish into hot jars and process for 10 minutes in a water bath canner.
