Focaccia

Ingredients

  • 1 1/2 tsp active dry yeast
  • 1 1/2 cups warm water
  • 4 cups all purpose flour
  • 1 tsp salt
  • 1/3 cup olive oil
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano

Directions

  1. Sprinkle yeast over warm water and let stand a few minutes.
  2. Combine flour, salt, and herbs.
  3. Drizzle in olive oil.
  4. Pour in yeast/water mixture.
  5. mix until just combined.
  6. Form dough into a ball.
  7. Coat with olive oil.
  8. Place in bowl and cover with plastic wrap.
  9. Set aside for 1 to 2 hours to let rest and rise.
  10. Gently knead bread and form to desired shape.
  11. Place on a sheet pan oiled with olive oil.
  12. Drizzle with olive oil.
  13. Cover with a towel and place in a warm area for 1 hour.
  14. Preheat oven to 400 degrees.
  15. Remove cover.
  16. Use your finger tips to form dimples.
  17. Drizzle with olive oil.
  18. Sprinkle with coarse salt.
  19. Bake until golden brown 30 to 40 minutes.
  20. Place on a cooling rack.
  21. Cut into desired size pieces and server..

Notes:

  1.  In step 10 above, you can break dough into mini balls to make personal sized biscuits.
