Chicken Chow Mein

Ingredients

  •  Udon Noodles 
  • 1 carrot thin sliced
  • 1/2 head cabbage thin sliced
  • 1/2 onion sliced
  • 1/4 cup chicken broth
  • 1/4 cup soy sauce
  • 1 tsp sesame oil
  • chicken breast thinly sliced
  • green onions sliced

Directions

Udon Noodles

  1. Bring a pot of salted water to boil.
  2. Add one bundle of udon noodles per person to the boiling water.
  3. Boil for 7 minutes
  4. Add one cup cold water.
  5. When water returns to a boil, remove from heat and pour noodles into a strainer basket.
  6. Rinse noodles in cold water and set aside.

Main Dish

  1. Coat the bottom of a large pan with oil and heat to medium high.
  2. Add chicken breast and sauté until almost done.
  3. Add carrots, celery, and onions and saute until desired doneness is reached.
  4. Add broth, soy sauce, sesame oil, and noodles.
  5. Cook until noodles are hot and sauces have thickened.

Notes:

  1. Frozen stir fry vegetables can be used to enhance the recipe.
  2. We sometimes add a can of bean sprouts and water chestnuts for added crunch.
  3. A family favorite is to add hoisin and kungpow sauce for an added spice kick.
