Chicken Chow Mein
Ingredients
- Udon Noodles
- 1 carrot thin sliced
- 1/2 head cabbage thin sliced
- 1/2 onion sliced
- 1/4 cup chicken broth
- 1/4 cup soy sauce
- 1 tsp sesame oil
- chicken breast thinly sliced
- green onions sliced
Directions
Udon Noodles
- Bring a pot of salted water to boil.
- Add one bundle of udon noodles per person to the boiling water.
- Boil for 7 minutes
- Add one cup cold water.
- When water returns to a boil, remove from heat and pour noodles into a strainer basket.
- Rinse noodles in cold water and set aside.
Main Dish
- Coat the bottom of a large pan with oil and heat to medium high.
- Add chicken breast and sauté until almost done.
- Add carrots, celery, and onions and saute until desired doneness is reached.
- Add broth, soy sauce, sesame oil, and noodles.
- Cook until noodles are hot and sauces have thickened.
Notes:
- Frozen stir fry vegetables can be used to enhance the recipe.
- We sometimes add a can of bean sprouts and water chestnuts for added crunch.
- A family favorite is to add hoisin and kungpow sauce for an added spice kick.
