Zucchini Relish

Ingredients

  • 2 cups chopped zucchini
  • 1 cup chopped onion
  • 1/2 cup chopped sweet yellow pepper
  • 1/2 cup chopped sweet red pepper
  • 2 Tbs salt
  • 1 3/4 cups sugar
  • 3 tsp celery seeds
  • 1 tsp mustard seeds
  • 1 cup cider vinegar
  • 1 tsp turmeric

Directions

  1.  Combine zucchini, onion, and peppers.
  2. Sprinkle with salt and let stand for 2 hours.
  3. Rinse and drain thoroughly.
  4. Combine remaining ingredients in a large dutch oven pan and bring to boil.
  5. Add vegetables and simmer for 10 minutes.
  6. Pack relish into hot jars and process for 10 minutes in a water bath canner.

  1. I triple the recipe.
