Poblano Potato Salad

Ingredients

  • 2 ibs red potatoes
  • 3 ears of corn on the cob
  • 2 poblano peppers
  • 1 cup chopped onions
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup chopped cilantro

Directions

  1. Cut potatoes in to 1/2 to 1 inch pieces.
  2. Boils potatoes in salted water until tender appprox 20 -30 minutes
  3. Drain potatoes. 
  4. Grill corn until evenly browned on all sides approx. 10 minutes.
  5. Grill peppers untill skin  is blistered and charred.
  6. Place peppers in a bowl and cover tightly with plastic wrap for approximately 10 minutes.  Hold peppers under running water and gently rub  the pepper skin off.
  7. Chop peppers.
  8. Cut corn off the cob.
  9. Put all ingredients in a serving bowl and stir gently. 
  10. Chill mixture .

Notes:

  1. You can substitute salad macaroni for potatoes.
  2. Salt and pepper to taste.
