Poblano Potato Salad
Ingredients
- 2 ibs red potatoes
- 3 ears of corn on the cob
- 2 poblano peppers
- 1 cup chopped onions
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/4 cup chopped cilantro
Directions
- Cut potatoes in to 1/2 to 1 inch pieces.
- Boils potatoes in salted water until tender appprox 20 -30 minutes
- Drain potatoes.
- Grill corn until evenly browned on all sides approx. 10 minutes.
- Grill peppers untill skin is blistered and charred.
- Place peppers in a bowl and cover tightly with plastic wrap for approximately 10 minutes. Hold peppers under running water and gently rub the pepper skin off.
- Chop peppers.
- Cut corn off the cob.
- Put all ingredients in a serving bowl and stir gently.
- Chill mixture .
Notes:
- You can substitute salad macaroni for potatoes.
- Salt and pepper to taste.
