Braised Red Cabbage (New Years 2017)

Ingredients

  • 4 slices of bacon (thinly sliced)
  • 2 medium onions (thinly sliced)
  • 1 cinnamon stick
  • 2 bay leaves
  • 4 tsp salt
  • 1 large or 2 small heads of red cabbage (thinly sliced)
  • 1 granny smith apple cut into bite size pieces
  • 2 to 3 cups chicken broth
  • 1/2 cup red wine vinegar
  • 2 Tbs sugar
  • 1/2 tsp ground black pepper

Directions

  1. Cook bacon over medium heat in a large dutch oven until crisp.
  2. Add onions, cinnamon, bay leaves, and 1 tsp salt.
  3. Cover and cook stirring occasionally until onion is tender (approx. 8 minutes).
  4. Increase heat to medium high and add cabbage.
  5. Cook and stir until cabbage is wilted (approx. 8 minutes)
  6. Add apple, broth, vinegar, sugar, the remaining salt, and pepper.
  7. Cover and cook while stirring occasionally until cabbage is tender.  (approx. 1 hour)
  8. Uncover and bring to boil.
  9. Cook stirring until liquid is reduced (approx. 5 minutes).
  10. Recipe says serves 6, but I say it serves 12…
