Braised Red Cabbage (New Years 2017)
Ingredients
- 4 slices of bacon (thinly sliced)
- 2 medium onions (thinly sliced)
- 1 cinnamon stick
- 2 bay leaves
- 4 tsp salt
- 1 large or 2 small heads of red cabbage (thinly sliced)
- 1 granny smith apple cut into bite size pieces
- 2 to 3 cups chicken broth
- 1/2 cup red wine vinegar
- 2 Tbs sugar
- 1/2 tsp ground black pepper
Directions
- Cook bacon over medium heat in a large dutch oven until crisp.
- Add onions, cinnamon, bay leaves, and 1 tsp salt.
- Cover and cook stirring occasionally until onion is tender (approx. 8 minutes).
- Increase heat to medium high and add cabbage.
- Cook and stir until cabbage is wilted (approx. 8 minutes)
- Add apple, broth, vinegar, sugar, the remaining salt, and pepper.
- Cover and cook while stirring occasionally until cabbage is tender. (approx. 1 hour)
- Uncover and bring to boil.
- Cook stirring until liquid is reduced (approx. 5 minutes).
